How beef pricing works

The $0.75 per pound covers processing your beef to vacuum-packed, boxed subprimals: the large cuts such as whole ribeye, strip loin, tenderloin, brisket and chuck. Hanging weight is the carcass weight after slaughter, before chilling and cutting.

If you want those subprimals cut into steaks, that is $2.00 per pound of subprimal weight. Ground beef is $1.50 per pound in bricks or $1.75 per pound as patties.

Payment is due in full at pickup. Cards carry a $3.00% fee.

Pricing questions

What is hanging weight?

Hanging weight, or hot carcass weight, is the weight of the carcass after slaughter, with the hide, head, feet and organs removed. A fed steer usually hangs at 60–64% of its live weight. See hanging weight vs. take-home beef.

Are your prices per animal or per pound?

Both. Beef has a per-head kill fee plus per-pound processing. Goats and sheep are a flat $90 per head.

What happens if I cancel?

Cancellations or changes with less than 14 days notice are charged the slaughter and rendering fee for each animal. If you booked more than 6 animals, we need 21 days notice.

Is there a storage fee?

Please pick up within 5 days of our call. Product not picked up and paid for within 5 days is forfeited to the plant, and the processing fees are charged to the card on file.
